A cross-linked starch is a starch molecule that has been chemically modified to create covalent bonds between different starch molecules. Wheat starch and its usage in cross-linked starch market is a water-soluble dietary fiber obtained from wheat. It has high amylose content which makes it highly resistant to hydrolysis by pancreatic proteases.
