Natural:


Natural citrate is a salt derived from citrus fruits. It has the ability to prevent or delay the ripening of fruit and vegetables, which makes it suitable for use as an anti-oxidant additive in food products. Citric acid is used to produce natural citrate by fermentation of sour orange juice and other similar processes.


Synthetic:


Synthetic Citrate is a colorless and highly soluble inorganic acid salt of citric acid. It is manufactured by the reaction between phosphoric acid and sodium carbonate or calcium carbonate at about 80o C to 100o C.
