Organic corrosion inhibitor is a chemical that inhibits or delays the process of oxidation in which organic materials such as fats, oils, and greases are converted to carbon dioxide and water. Moisture causes an exothermic reaction on contact with steel; it also leads to rapid corrosion if it's present in high quantities.
