The growth of this market is driven by the increasing demand for enzymes in various industries such as food and beverage, cleaning, biofuel and animal feed. The food and beverage industry is one of the major end-users of enzymes in order to produce various types of products such as breads, cheese, yogurt and beer. Enzymes are also used in cleaning applications for textile care or dishwashing detergents. Biofuel production has been increasing over the past few years due to its environmental benefits over fossil fuels; enzymes are used in this process for breaking down cellulose into sugar molecules that can be fermented into ethanol or other biofuels. Animal feed is another application where enzymes are used extensively because they help improve digestion rates by breaking down proteins into amino acids which can then be absorbed by animals more easily than whole proteins. Carbohydrases: Carbohydrases are a type of enzyme that catalyzes reactions involving hydrolysis (breaking down) carbohydrates such as starch or glycogen into smaller sugars like glucose or maltose respectively; these sugars can then be further broken down into simple sugars like fructose or sucrose respectively using other types of enzymes called glycosidases (proteases). Carbohydrases have many applications including use in food processing industries where they break down starches found in cornstarch so that it can be converted into glucose syrup which is then processed further to make high fructose corn syrup (HFCS). They also have applications in brewing processes where they break down maltose found in barley so that it can be converted into glucose which will later undergo fermentation with yeast cells to produce alcohols like beer or wine; carbohydrases also have applications when making breads since they break up complex carbohydrates found within wheat flour so that yeast cells present within dough will convert them into carbon dioxide gas bubbles which cause dough expansion during baking process thereby producing fluffy breads with good volume and texture properties.
