Centrifugal dehydration is a drying process in which the moisture present in the feed is removed by spinning it with high speed. The centrifugal dehydrator consists of a main shaft, impeller, andasket mounted on an open frame. The food to be dried is placed in the basket and then passed throughthe impeller where it is accelerated to high speeds (13000 rpm).
