Salsas, dips and spreads are sauces with a range of textures, flavors, and ingredients that are used as an accompaniment to dishes. Salsas have a smooth and liquid texture while dips have a thicker consistency. Spreads are usually not as thick as dips but have a more solid texture than salsas. Black beans is the most popular type of salsa in the global market followed by chipotle, corn, fruit tomato jalapeno. In the household segment globally in 2015-2016 was $1.2 billion for black beans salsa; $1 billion for corn salsa; $335 million for fruit tomato jalapeno salsa; followed by chipotle at $108 million; then came tomato at $105 million and finally jalapeno at $27 million in total sales. In the United States, salsa is primarily sold as a condiment in jars or cans or as a dip; it is not usually served as an appetizer. In Mexico, salsas can be served as accompaniments to grilled meat, sometimes with corn tortillas but more often with fresh corn tortillas. The salsas are usually heated and blended until they are thick and the ingredients are finely chopped. Salsa verde, red tomato salsa, and green tomato salsa are popular types of Mexican salsas. Salsas have been around for about 5,000 years since they were first developed by Mesoamericans in Central America who used tomatoes (which were new to them) and chiles (which grew well in their climate). Pre-Columbian inhabitants of the Yucatán Peninsula used a water-based sauce called "achiotl" which was made from ground tomatoes mixed with chile peppers to preserve foods like wild game meat. Salsa was also used at funerals—the Maya believed that it would help the person's soul reach paradise—and at other important events such as weddings and birthday parties among others. This use of different types of sauces has been passed down through generations from mother to daughter although there were no written recipes for these sauces so all knowledge was passed orally from one generation to another up until the present day when some recipes have now been formalized into written form.
