Product Definition:
Small ale is a term used to describe an unhopped malt liquor. The purpose of small ale was to make it easier and less expensive to produce beer.

The process of limit fermentation is to control the amount of yeast that can grow at a particular time. It is also known as attenuation or maturation, where the percentage alcohol content in beer can be controlled. The most common way to do this is by using a blow-off tube which leads to an attached kink in the hose, and sealing it with tape so that no air can get in or out during fermentation.
Dealcoholization Method:
The dealcoholization method is used to increase the strength of beer by adding yeast and/or sugar during the fermentation process. The amount of yeast added, as well as its quality, has a significant impact on the final product.
This method can be applied for both craft and commercial beers; however, it is mostly used for small ale (4.8% - 5.5%) products due to their low alcohol content compared to other beer styles (6% - 20%).
