Extract:
Extract is the concentrated essence or flavor of a food item. It can be obtained from fruits, vegetables, nuts, spices and herbs by either freezing or steaming them. The most commonly used extracts are vanilla extract, almond extract (almond being a source of vitamin B), orange extract and coffee/tea extracts. Vanilla is the most popular flavor in the world which has an intense sweet fragrance like no other; it's also one of my favorite flavors too.
Application Insights:
The food industry accounted for more than 70% of the global vanilla market in 2017. The segment will expand further at a steady CAGR owing to the growing demand for vanilla flavors and extracts in various foods and beverages such as cakes, pastries, cookies, pies, chocolates, ice creams etc. Furthermore, increasing consumption of alcoholic drinks is expected to drive demand from the food industry over the forecast period.
