The optimal grade product contains the highest quality wheat gluten and is most commonly used in food applications. The suboptimal grade product contains lower quality wheat gluten and is most commonly used in animal feed applications.
Product Definition:
Wheat gluten, also known as wheat protein, is the main protein found in wheat. It is a type of gluten, which is a family of proteins that occur in some grains, including wheat and rye. Wheat gluten helps to give bread its structure and chewiness. It is also used as a thickener in some food products.
Optimal Grade Product:
Optimal grade product is the highest quality of wheat gluten which has been processed to remove impurities. Optimal grade products have a longer shelf life and are free from any artificial preservatives, colorants or flavors. Optimal grade products are used in various applications such as bakery, confectionery & chocolate production, dairy and meat products manufacturing among others.
Sub-optimal Grade Product:
Sub-optimal grade product is the lowest quality wheat gluten which has less protein content as compared to the other grades. It is also known as poor quality wheat gluten or second grade product. This type of product contains around 15% to 20% protein content on average and it can be anywhere between 10%-35% depending upon the variety of wheat, storage conditions, and extraction methods used.
