Wheat gluten proteins are the major storage proteins in wheat endosperm. They are classified into three types: optimal grade, sub-optimal grade and general grade. The optimal grade gluten is high in protein (75-85%) and low in starch (5-10%). The sub-optimal grade gluten is medium in protein (60-70%) and high in starch (20-30%). The general grade gluten has a lower protein content (40-50%) and a higher starch content (40-50%). Wheat gluten proteins have many applications, such as food, animal feed and others. Product Definition:
A wheat protein isolate is a powder made from the gluten of wheat. Wheat gluten is a mixture of proteins that are found in wheat flour. It is used as a food additive to improve the texture and elasticity of foods like bread and pasta.
Optimal Grade:
Optimal grade is the grade of whey protein which has the highest biological value.
Sub-optimal Grade:
Sub-optimal grade is the range of wheat gluten that falls between Optimum and Standard grades. It is widely used in various food applications such as bakery, confectionery & chocolate, meat products, sauces & dressing and dairy products.
