It consists of around 90% water and 10% protein, phospholipid, and other compounds such as potassium salts, calcium salts sodium chloride & calcium carbonate. Liquid Edible Animal Fat (LEAF) has high nutritional value as compared to vegetable oil which makes it an ideal substitute for cooking purposes.
Solid:
Solid is the by-product obtained during the rendering of edible animal fat. It consists of fatty acids, wax esters, glycerolipids and phospholipids. Solid is used as feed for cattle and swine on a commercial level. The most commonly used solid in edible animal fat market is suet which has high demand from developed countries such as U.S.
