Invert sugar is a type of sugar that has been chemically altered to have two different sugars, glucose and fructose, bonded together. 50 Percent:


50% is a syrup or liquid used invert sugar production. It is also known as dextrose, which is the generic name for glucose syrup. The 50% solution consists of 50% of dextrose (dextrose monohydrate) and has a similar molecular structure like that of sucrose (sucralose). Dextrose has been approved by the FDA as GRAS (Generally Recognized As Safe).


100 Percent:


100 percent is a type of invert sugar which has no other ingredient than sugar. It’s produced by heating white or brown sugar to until it reaches soft ball stage and then cooling it down. The final product is a solid mass that may have small crystals in it, but still has the appearance and sweetness of regular white or brown sugar.
