Market Overview:

The global microbial source hydrocolloids market is expected to grow at a CAGR of 5.5% during the forecast period from 2018 to 2030. The growth in this market can be attributed to the increasing demand for functional foods and beverages, rising awareness about the benefits of hydrocolloids, and growing demand from emerging markets. The microbial source hydrocolloids market is segmented on the basis of type, application, and region. On the basis of type, xanthan gum accounted for the largest share in 2017 owing to its high functionality in food applications. It is also used as a thickener and stabilizer in various food products such as sauces, dressings, ice creams, bakery items etc. Other types include curdlan gum (a natural polymer produced by bacteria), gellan gum (a water-soluble polysaccharide), and others (including pectinase enzyme preparations). On the basis of application, bakery & confectionery held the largest share in 2017 followed by dairy products owing to their growing popularity among consumers across regions. Hydrocolloids are increasingly being used as ingredients in these applications due to their ability to improve texture, flavor profile,,and shelf life of products while reducing fat content or adding nutritional value . Beverages was another key application area for microbial source hydrocolloids with increasing demand for healthy drinks fortified with functional ingredients such as probiotics or prebiotics .

Global Microbial Source Hydrocolloids Industry Outlook

Product Definition:

A microbial source hydrocolloid is a natural polymer made up of repeating units of sugar molecules. These polymers are produced by microorganisms, such as bacteria and fungi. Microbial source hydrocolloids have many important applications, including food processing, pharmaceuticals, and cosmetics.

Xanthan Gum:

Xanthan gum is a type of hydrocolloid that is produced from sugar and has a molecular weight between 200-300 Da. It consists of polysaccharides, which are linked together in an elongated chain. The most common application of this product includes food & beverage industry, pharmaceuticals, personal care products and cosmetics among others.

Curdlan:

Curdlan is a new term in the hydrocolloids market and it has been defined by The European Food Safety Authority (EFSA) as “a natural food ingredient derived from microbial fermentation of micro-organisms such as bacteria and yeasts”. It is also approved by Japan's Ministry of Health, Labor & Welfare (MHLW) for usage in dietary supplements.

Application Insights:

Bakery and confectionery was the largest application segment in 2017, accounting for over 45% of global revenue share. The demand for microbial source hydrocolloids is expected to increase owing to their use in various bakery products such as cakes, pastries, cookies as well as non-alcoholic beverages such as juices and smoothies.

The dairy industry also accounted for a significant revenue share of around 26% in 2017 due to rising demand from cheese manufacturers worldwide. Microbial source hydrocolloids are used extensively by the dairy industry including milk replacers for infant formula production and regular milk consumption by adults. They are also used extensively in ice cream production where they act as stabilizers, foaming agents and emulsifiers among others.

Regional Analysis:

Asia Pacific was the largest regional market in 2017 and is expected to maintain its position during the forecast period. The region accounts for more than 40% of global population, and thus, consumption of microbial source hydrocolloids is high in this region. China has been one of the major consumers due to large scale production as well as consumption of dairy products. In addition, India has also been witnessing significant growth owing to increasing demand for bakery and confectionery products along with dairy applications.

Europe accounted for a significant share in terms of volume as well as revenue owing to growing demand from countries such as Germany, U.K.

Growth Factors:

  • Increasing demand for functional foods and dietary supplements
  • Rising awareness about the health benefits of probiotics
  • Growing popularity of fermented foods and beverages
  • Proliferation of online retail channels
  • Emerging applications in food, nutraceuticals, and pharmaceuticals
