Xanthan gum is a type of hydrocolloid that is produced from sugar and has a molecular weight between 200-300 Da. It consists of polysaccharides, which are linked together in an elongated chain. The most common application of this product includes food & beverage industry, pharmaceuticals, personal care products and cosmetics among others.
Curdlan:
Curdlan is a new term in the hydrocolloids market and it has been defined by The European Food Safety Authority (EFSA) as “a natural food ingredient derived from microbial fermentation of micro-organisms such as bacteria and yeasts”. It is also approved by Japan's Ministry of Health, Labor & Welfare (MHLW) for usage in dietary supplements.
